Many years after Andrew Peller realized his dream of producing premium quality wines in Canada, Peller Esates stands tall as a giant beacon for food and wine. When in the Niagara region, this is a destination that can excite and soothe your senses. Outside of the stellar portfolio of wines (at every price point and level of appreciation), chef Jason Parsons manages a stellar food program that is worthy of a Michelin star or two, should the travel guide ever choose get serious and include Canada (Ontario specifically) in its program.
Today’s wine is inspired by one pairing programs at Peller Estates, and I can’t think of a more sinful and decadent pairing.

Ice Cuvée Rosé and Neuhaus Chocolates
Tart flavours in sparkling wine can collide with cocoa and the creamy characteristics of chocolate. Generally the best way around this is to choose a sparkling wine that has ample fruit notes which blend and accentuate both chocolate and wine. Enter the Signature Series Ice Cuvée Rosé from Peller, not only an award winning sparkling wine made right next door in Niagara, but a fan favourite. A tratidional method sparkling wine made with Chardonnay(55%), Pinot Noir(35%) and Cabernet Franc (10%). After aging for 14 months on lees, a dosage of Cabernet Franc Icewine and Vidal Icewine is added.
The icewine brings plenty of flavour to the table, and that is precisely what makes this wine so chocolate friendly. Soft bubbles bring a medley of fruits like strawberry, watermelon and peach, crispiness throughout, finishing off with a flick of spice.

I paired the wine with chocolates from Neuhaus, a world famous master chocolatier based out of Belgium. Neuhaus has also demonstrated that they take wine-chocolate pairing seriously by releasing their ‘Sommelier Collection’, 16 chocolates recommended by Gault Millau that are guaranteed to pair with a variety of wines. You can find Neuhaus at Pusateri’s and Whole Foods in Toronto.
