We make great sparkling wine in Ontario, but Niagara gets most of the attention. From the county’s first winery dedicated to producing sparkline wine, comes a Rosé Sparkling that is an absolute must-try. Winemaker Jonas Newman who formerly worked at 13th Street Winery, produced this sparkling wine completely from estate grown grapes. It’s the first vintage release, crafted in a converted dairy barn that Jonas and his wife purchased a few years ago to start a winery.
From start to finish, the wine is a generous burst of fruit, toast and stone. The wine is primarily Pinot Noir (90% Pinot Noir, 10% Chardonnay), crafted in the traditional method. If the wine is sold out by the time you visit Hinterland, be sure to try their 2007 Les Etoiles. A pinot noir based sparkling wine full of fresh fruit and nuts. It’s pricier ($39.20) but well worth it.
